the leaves are gently tumbled to trigger partial oxidation.<\/li>\n\n\n\n<li>Resting Cycles \u2014 oxidative enzymes gradually work through the leaf.<\/li>\n\n\n\n<li>Fixing (Kill-green) \u2014 halts oxidation at the desired level.<\/li>\n\n\n\n<li>Rolling or Balling \u2014 depending on regional style.<\/li>\n\n\n\n<li>Drying \/ Baking \u2014 stabilises the final aroma.<\/li>\n\n\n\n<li>Roasting (optional) \u2014 high mountain oolongs are lightly roasted;
